While you can’t say this about everything, it’s been like a little trip to the past that’s actually turned out better than I remembered! One thing I’ve been using it for is this Campbell’s Ultimate Slow Cooker or Instant Pot Roast.

If you saw my last two posts, you might have guessed something with barbecue flair was upcoming. The Sweet Heat Rub and the Honey Chipotle Barbecue Sauce were a dead giveaway. So at last, here’s my Slow Cooker Country Style Ribs.
Chicken Tortilla Soup (or Turkey Tortilla Soup)
I don’t know about you, but I love, love, love me some Chicken Tortilla Soup. Just put it in front of me and I’ll eat it – no questions asked. Anytime I go out and see Chicken Tortilla Soup on a menu, I hafta order it. Doncha hate it when it comes in a little tiny cup? Well, that won’t be a problem when you make this at home, and you can make it on the stovetop or in the slow cooker!
Vaguely Vietnamese Slow Cooker Pork Tacos
Slow cooked to perfection, this fall off the bone, tender pork was featured in “Slow Cooker Redeemed” in the New York Times. “It results in a vaguely Vietnamese tangle of pulled pork that is best accompanied by a bright and crunchy slaw, and served on warm flour tortillas…” I made you wait for Vaguely Vietnamese Slow Cooker Pork Tacos, yesterday when I posted the Vaguely Vietnamese Slaw recipe, and I think these Tacos are worth that little delay.
Slow Cooker Baby Back Ribs (Spare Ribs Too)
Does it seem you wait and wait and wait for Summer and all of a sudden it’s just too dang hot? And as we’ve all heard, “It’s not the heat it’s the humidity.” What exactly IS that supposed to mean, anyway? Don’t ever say that to me. I’ll be cranky when it’s too hot and give you a “look.” You know the kind of look I mean…the one that says “What in the H E double hockey sticks are you talking about?!” That’s when it’s too hot to cook, too hot to bbq, and you need Slow Cooker Baby Back Ribs in your life. Or Spare Ribs. It doesn’t matter, they’re both so good with this method.
