I kind of fell in love with the idea of the Coquito – A Coconut Rum Cocktail, before I ever had my first sip of this cocktail concoction. Thinking back, I’m not even sure where I first heard about the creamy, frothy, coconut deliciousness laced with Rum and touched with cinnamon that is the Coquito. Def not when I was growing up in Iowa, lol! The Midwest weather, especially in Minnesota, where I live now isn’t traditionally considered to be too hospitable to people used to warmer climes – or even to us born here. The Coquito will make me forget all that, even though it’s January, now!
Pina Colada Fruit Salad
Pina Coladas. They’re so good. Sweet, but good. What if you could make a fruit salad that had all the flavor (but none of the booze) of a Pina Colada? That’s Pina Colada Fruit Salad.
Buche de Noel Yule Log
I try to make this cake. Buche de Noel Yule Log, from Martha Stewart’s 2003 Christmas Book, every Christmas Season. She calls it Birch de Noel, and I always thought it was fitting because up “Nord” here in Minnesota, all the logs are blanketed in snow through the winter season. You betcha! I guess it appeals to the realist in me, though this dessert is pure fantasy!
Coconut Tres Leches Cake
My brother reminds me now and then that any dessert that isn’t chocolate is just a waste of calories. I think I may have very well proved him wrong with this Coconut Tres Leches Cake with Caramelized Bananas, and proving my brother wrong is something that happens once a decade or so…if that! Sorry, bro, you know I love you!
