If you follow me, you know I love me some oatmeal! I have a more than a few oatmeal recipes on my site! But this German Chocolate Granola is in a class by itself.
I’m always making granola of one type or another but never seem to actually post recipes. Maybe because in real life I’m more of a dumper than a measurer, at least when I make granola. This Healthy Almond Coconut Granola, though is just too good to be missed, so I measured! Feel free feel to tinker, though, to suit your tastes.
Just the other day I got an email from the New York Times “What to cook this week.” Do you get them? They charge a subscription for their site but you can view the recipes in the email at no cost, at least for a while. They’ve become kind of a highlight for me, just a minute or two of reading editor Sam Sifton talk about food. One of the food items he mentioned recently was German Chocolate Cookies.
I kind of fell in love with the idea of the Coquito – A Coconut Rum Cocktail, before I ever had my first sip of this cocktail concoction. Thinking back, I’m not even sure where I first heard about the creamy, frothy, coconut deliciousness laced with Rum and touched with cinnamon that is the Coquito. Def not when I was growing up in Iowa, lol! The Midwest weather, especially in Minnesota, where I live now isn’t traditionally considered to be too hospitable to people used to warmer climes – or even to us born here. The Coquito will make me forget all that, even though it’s January, now!
Pina Coladas. They’re so good. Sweet, but good. What if you could make a fruit salad that had all the flavor (but none of the booze) of a Pina Colada? I’d drink to that. And the fruit in this salad, especially the bananas and pineapple, play so nicely with the lovely coconut flavors of the Pina Colada mix. Whoaa – mix? Yeah, mix.
