Winter has finally settled in with a vengeance here in Georgia; we’ve been lucky with pretty warm weather until now. It’s triggered me to make a big old pot of Mexican Chicken soup to get me through.
Lemon Pepper Vegetable Saute
Sometimes you need just a drop-dead simple side, and especially this time of year (August) why not take advantage of all the summer veggies to be had at their freshest (and cheapest) and in abundance? That’s where this Lemon Pepper Vegetable Saute comes into play. I know sheet pan veggies are all the rage these days, but I chose to use a skillet- fast, easy and sometimes, you just don’t want to heat up that oven.
Crispy Zucchini Fritters
I had zucchini in my fridge. I know I bought them for something specific, but who knows what that was! It was for the best coz instead, I made Crispy Zucchini Fritters. These Crispy Zucchini Fritters are pretty scrumptious and might be just the thing if you have zucchini still producing in your garden.
Slow Cooker Zucchini Beef Soup
Slow Cooker Zucchini Beef Soup has got to be the perfect end of summer soup, especially if you happen to have a garden still spitting out zucchini! Here in the Twin Cities, I’m still seeing a few on my neighbor’s plants. Me, I know better than to ever plant zucchini – the plants never stop and you’ll have zucchini out the ears, lol!
