Awhile back, I put out a recipe for my new fave burger, Feta Stuffed Harissa Sliders. Those are such juicy, fun, zippy burgers; check them out if you didn’t see them when I posted them. Since I used Harissa in those burgers, a North African condiment of different peppers, I thought it would be fun to find something from Africa to go along with the burgers. So here it is, African Tomato & Onion Salad.
Instant Pot Mexican Rice
So maybe this is just the week for Mexican basics done in the Instant Pot. The other day it was my Instant Pot Refried Beans, and today it’s Instant Pot Mexican Rice. Which makes me wonder, do people from Mexico call their Mexican Rice “Mexican Rice?” I’m from Iowa and I call my Ham Balls “Iowa Ham Balls” on my site (because that recipe really IS made a lot in Iowa, probably a nod to the German settlers and it has that hallmark Sweet n’ Sour flavor) but if I’m just talking to someone, I just say Ham Balls. Just saying it makes me want to snicker, btw. Here’s the recipe for Iowa Ham Balls with Sweet Sour Glaze, now that I mentioned them.
Moqueca Brazilian Seafood Stew
So how about it guys, do you read magazines any longer? I get so much information online that they sometimes seem obsolete. And yet I manage to subscribe to a couple of food magazines because they are just so inexpensive. And they inspire me – when I manage to get them open and actually read them! That’s how I fell in love with the idea of this Moqueca Brazilian Seafood Stew – I saw it in Food & Wine Magazine.
Easy Honey Roasted Feta
I’m not sure when it all started. Maybe when I ran down to Minneapolis (in rush hour, no less) and picked up some gorgeous Feta at Bill’s Imported Foods (I love to give a shout-out to a local business) so I could make Bulgarian Clay Pots (not the pottery, the recipe) and ever since then, I can’t stop eating Feta or recipes with Feta in them! And so maybe it isn’t such a surprise that I’d make Honey Roasted Feta.
Mediterranean Salmon Salad
Our summer has gone from cold, cool and rainy to hot, humid and rainy in a snap of the fingers! I don’t know about you but I just go limp when it’s too hot and humid. I don’t want to do anything, I don’t want to eat and I sure as heck don’t want to cook. And then when I do get hungry? I make bad choices. My solution? Make a great big ol’ salad and top it off with a quick & easy protein and a fabulous dressing. And so here’s my Mediterranean Salmon Salad.
