So is it hot where you are? My gosh, it’s like Hades up here in Minnesota, you betcha, and we’re really not used to high 80’s to 90-degree weather on a regular basis. A little in August maybe but I’m just about dying. And while I’d love to be out grilling something, I’m like “No thank you! I had a thought the other day. About Knorr’s Spinach Dip. I don’t know why I got it in my head that I had to make that old fashioned, spinach dip. The one we used to make with a Knorr’s Vegetable Soup packet (now it’s called Knorr’s Vegetable Recipe Mix) and was usually served in bread bowls. And way back the 80’s I remember it was all the rage. I also remember Knorr’s Spinach Dip as being perfect on a hot summer day, all cool and creamy and delish and served at just about any summer party. Memorial Day, Father’s Day, Fourth of July, even Labor Day.

See the New England Patriots were playing the Los Angeles Rams (and the Patriots won) and I thought those “grinders” (that’s just the local name for sandwiches) would be perfect for the Superbowl or any game day, or really anytime! What’s not perfect? Leftovers. Leftover link sausages? They’re kinda sad. So I’ve refashioned them into Orzo with Sausage & Peppers.

Does anybody remember way back when I posted a copycat recipe for Panera’s Steak & White Cheddar Panini? I mentioned I already had a “go-to” sandwich, but I followed my friend’s lead and ordered the steak one. My “go-to” was Panera’s Turkey Artichoke Panini. When I was out with my friend I didn’t realize it was no longer on the menu, which is a good thing because I swear I had to grieve alone when I found out.

I used to be kinda opposed to Hot Spinach Artichoke Dip, just on principle…and here’s the deal: Back in the ’80s, it was all about the Creamy Knorr’s Spinach Dip and it was served warm or cold in a bread bowl. I loved that stuff! And I remember how fancy we all thought it was, too.
Then in the ’90s, it was all about the Hot Artichoke Dip. It seemed that just about every restaurant had a version. It was everywhere! And I loved that stuff, too! Of course, I’ve always had a thing for artichokes, and guess who else in the house does? Homer, my cat. She goes nuts over them. She can smell even the canned artichokes in the grocery bag and immediately comes running!
