Merry Christmas, everyone! Here it is, Christmas Eve Day, and I thought I’d show you one of my favorite Christmas Eve dinners, this time done in the Instant Pot. It’s Chili. The Best Instant Pot Chili, to be exact. I know, it’s strange to some people to have Chili as a Christmas Eve dinner.

Maid-Rite Sandwiches – Instant Pot or Stove-top
I grew up in the Midwest in the ’60s eating various and assorted “loose-meat” sandwiches, mainly Maid-Rite Sandwiches or as they are sometimes called Tavern Burgers. I never heard the word, Sloppy Joe, until I was an adult and moved away, and then no-one seemed to know what a Maid-Rite was!

Our Family’s Favorite Tacos
Unless you grew up around Mexican food, chances are your first introduction to it was probably the ground beef taco. And maybe you make them for your family – they’re fast, easy & everyone seems to love them from kids to kids at heart. I make a few different kinds of ground beef tacos, but these are our fave.

Enchiladas con Pollo
Years and years ago my sister gave me a cookbook called Women of Great Taste from the Junior League of Wichita, Kansas. It wasn’t a big cookbook, but I used it a LOT. Their Enchiladas con Pollo became a family favorite. Talk about cheesy creamy deliciousness!

Iowa Ham Balls with Sweet Sour Glaze
“No, ga-hrose! Ham Balls?” Yeah, my sister didn’t hold back when I told her I made them. And that gross was a whole two-syllable gross! Too bad she’s so far away coz I know I could convert her with these little lovelies. They’re the real, deal Iowa Ham Balls with Sweet Sour Glaze, heritage style. No soup or ketchup or any weirdness at all. Just good down-home scratch cooking.
