This is my Mom’s Classic Carrot Cake and for a while, it was a go-to for special occasions, especially since it was always a two-layer affair. I think I’ll always associate carrot cake with Easter…in my mind, I guess, Easter goes hand in hand with rabbits and rabbits eat, well, carrots – and just about anything else in the garden!

This Easy Pumpkin Spice Sheet Cake has a special blend of warm fall spices with just a bit of a kick from a touch of black pepper. It’s delish!

Here’s another one. This is my Mom’s Cream Cheese Frosting. I used it today for my Easy Pumpkin Spice Sheet Cake.

If you’re old enough, you’ve probably had this salad, Classic Spinach Salad with Warm Bacon Dressing, at least if you live in the States. It was everywhere in the late ’70s and early ’80s and was served for decades. And then it disappeared. Fell out of grace.
