It’s been years and years since I last made this Best Jiffy Cornbread. I’m thinking about 1985 or so! Back then I often brought it office food days but the last time, I think, was a Thanksgiving get-together with friends.

If you read that post, you’ll see I’m a little bit adamant about it. But then a couple of years ago, my sister talked me into doing her Ridiculously Delish Bacon Stuffing, and now, here I am posting out this recipe for a Chorizo & Cranberry Cornbread Stuffing.
Cornbread Salad
My sister raved about Cornbread Salad and forced me to make it. It sounds crazy. (Both the recipe and the insistence, lol.) I tried to blow her off, but she wouldn’t let it go. She made me promise to make it and report back! Once I did, I fell in love. Hard.

There’s something that divides the North and the South besides the Mason-Dixie Line – Cornbread! I love moist, sweet Northern cornbread, but sometimes you gotta have a have a real deal Southern Skillet Cornbread.
Jalapeno Cheddar Cornbread
So, how do you all like your cornbread? Me, I’m a Northerner, through and through. I like mine light and fluffy and moist, and in this instance, with a bit of a bite from jalapeno and cheddar in the cornbread and forming just a bit of a crust on top.
