If there is anything I like to have exactly the same every single year, almost without exception, it’s my very traditional Classic Midwestern Stuffing. If you read that post, you’ll see I’m a little bit adamant about it. But then a couple of years ago, my sister talked me into doing her Ridiculously Delish Bacon Stuffing, and now, here I am posting out this recipe for a Chorizo & Cranberry Cornbread Stuffing.

Classic Cornbread Salad
My sister told me about Cornbread Salad. I mean, really, if she hadn’t raved, I never would have made it. You gotta admit, Cornbread Salad sounds a little strange. I think she MADE me promise to make it and report back once I had! And once I did, I fell in love. Hard.

Southern Skillet Cornbread
You know I posted a recipe just the other day for some very special cornbread, my Jalapeno Cheddar Cornbread. And declared (oh but I do declare a lot of things, just because this is my site, lol) that being a Northerner, I like my cornbread light & fluffy & moist. That being said, I actually grew up in Iowa and grew up on cornbread just like this Southern Skillet Cornbread.

Jalapeno Cheddar Cornbread
So how do you all like your cornbread? Me, I’m a Northerner, through and through. I like mine light and fluffy and moist and in this instance, with a bit of a bite from jalapeno. It’s not too much heat, but just enough to make you sit up and take notice.

If you want an incredible, moist, fluffy cornbread, you’ve got to try Famous Dave Anderson’s recipe for his Famous Dave’s Cornbread. He claims it’s even better than his corn muffins that are served at his Famous Dave’s restaurants. I agree!
