Mardi Gras is almost upon up, and Mardi Gras always makes me think of New Orleans and New Orleans always makes me think of Jambalaya. See how my mind works? It’s all about the food, lol! And while my fave Jambalaya Recipe is already on my site, one made with a roux (that’s said to be the Cajun-style) I really wanted to up my game this year and perfect a Creole-style Jambalaya, the tomato-y kind. Yeah, I’ had to get out of my (very delish) Cajun rut and make this New Orleans Creole Jambalaya for Mardi Gras this year.
So I was trying to think of the last time I made Soup. It was so long, I had to look it up! I made a White Chicken Chili that can be made in the Slow Cooker, Instant Pot or on the Stove in January, and it’s pretty soup-like but the last bone fide soup I made was in December: My friend Tanya’s Instant Pot Mexican Chipotle Chicken Soup. So I’m due! You, my friends, are due! I’m getting out of my Mexican soup rut and shaking things up with this Stuffed Bell Pepper Soup Instant Pot/Stove Top.
Have you had those marvelous pickled veggies in restaurants that are sometimes a garnish on Mexican or food from other Latin American countries? And of course, as I’m saying this, I’m assuming that you’re probably not in Latin America and don’t already make Escabeche, Mexican Pickled Vegetables! Although I do get visitors from all over the place and so far today, according to the WordPress wizards, I’ve had seven visitors from Mexico! Hola!
If you follow me (and if you don’t, I’d love it if you do, see the right sidebar) you know I made Boston Sausage & Pepper Grinders right before Superbowl 2019. See the New England Patriots were playing the Los Angeles Rams (and the Patriots won) and I thought those “grinders” (that’s just the local name for sandwiches) would be perfect for the Superbowl or any game day, or really anytime! What’s not perfect? Leftovers. Leftover link sausages? They’re kinda sad. So I’ve refashioned them into Orzo with Sausage & Peppers.
The Superbowl is coming right up! Now that’s a big deal in the U.S. for those reading from far-flung lands and it’s an event. We always had a great football team in my hometown, but I’m just not the fan I used to be. I gotta admit, I’m fan of the food, though, and the Superbowl is an excuse to hang out either in front of the TV or in the kitchen. Since the New England Patriots are playing this year, I’m making the Classic Boston Sausage Pepper Grinders.

When I worked on my family history, I was surprised to find out how many Pennsylvania Dutch & Amish ancestors I had. Of course, those ancestors multiply quickly as you work back. You start with 4 grandparents, then 8 great, then 16, 32, 64, 128, 256 and by the time you get back a few more generations you realize that you’re related to half the people in the US! Our good neighbor in South Dakota was a 9th cousin! Hi Auntie Mary! But what I’m getting at I’m wondering if I have a predisposition for the sweet/sour flavors so often found in Pennsylvania Dutch cooking, and especially this Pennsylvania Dutch Broccoli & Bacon? Is there a gene for that?

Slow Cooker Zucchini Beef Soup has got to be the perfect end of summer soup, especially if you happen to have a garden still spitting out zucchini! Here in the Twin Cities, I’m still seeing a few on my neighbor’s plants. Me, I know better than to ever plant zucchini – the plants never stop and you’ll have zucchini out the ears, lol!
I have seen so many articles and posts about Yaka Mein, ever since Anthony Bourdain featured Miss Linda Green on his show, “No Reservations.” But Yaka Mein first came on my radar in this article from Go Nola. I knew I just had to taste Yaka Mein and I knew the only way that was going to happen is if I made it myself. So here is my Instant Pot Yaka Mein. (Stovetop directions included, too.)
Yaka Mein has a long history so I’m not going to go too much into that because it’s been covered extensively elsewhere, like in this article from The Deep South. I have a new favorite “Salsa”, Roasted Sweet Corn Salsa. This salsa is like everything good in the world all combined into one beautiful, corny, creamy, cheesy, spicy dip.
I wasn’t sure whether to call these Old Fashioned Marinated Carrots or Classic Marinated Carrots, but either way they’re delicious, especially in the Summer. They’re cool and refreshing. The Marinade is almost like a tangy Catalina (or “French” dressing, if you’re as old as I am) and they’re the perfect thing for a summer picnic or potluck.

Merry Christmas, everyone! Here it is, Christmas Eve Day, and I thought I’d show you one of my favorite Christmas Eve dinners, this time done in the Instant Pot. It’s Chili. The Best Instant Pot Chili, to be exact. I know, it’s strange to some people to have Chili as a Christmas Eve dinner.

The stunning and absolutely delish Biltmore House’s Tawny Baked Ham. It was just a half ham, but of course, there were leftovers! And this year, part of those leftovers went to make Instant Pot Opelousas.
