I’ve been on a little Arepa kick lately – I made these Shredded Chicken (Pollo Mechado) Arepas which were fabulous, then went on and revisited the other Arepas on my site, my Chicken Avocado Arepas. So of course, I needed to revise my post on how to make the actual Arepas, which are the little “buns”.
I have kind of a thing for Ropa Vieja and if you’re here, maybe you do, too. I already have a recipe on my site for a long-simmered, Slow Cooker Classic Cuban Ropa Vieja, long a family fave, but these days, I’m all about the Instant Pot…and so I wondered if an Instant Pot Ropa Vieja would be just as good. Verdict: Yup, yup, yup! It’s fabulous.
My son and I had the best time making these little Pulled Pork Mini Bells the other day. They were each just a perfect scrumptious little bite or two and I thought they might make a great lower carb option for a casual holiday party or a game day. Fair warning: they’re a crowd pleaser and are going to go fast!
I’m a huge fan of rice pilaf, especially ones with wild rice in them. Now, I might be able to claim that’s coz I’m from Minnesota, you betcha, which for decades was the bastion of wild rice. Truth be told, it’s because I’m a child of the 1960s and wild rice pilaf was served at so many restaurants, especially with kebabs which became wildly popular around that time period. Now I make Instant Pot Wild Rice Pilaf and it’s a game-changer.
I see recipes for sheet pan fajitas all the time and have even made them myself (and I have a dry Fajita Seasoning on my site to sprinkle on those sheet pan fajitas) but every once in a while I want the real deal. Real deal smoky, spicy lime-y grilled fajitas. Classic Grilled Chicken Fajitas.
