Slow Roasted Cherry Tomatoes
Awhile back, way back when, I made Slow Roasted Tomatoes, a technique I stole from Bon Appetit. They are more fabulous than words can say, but when I say slow-roasted, I mean six to eight hours in the oven slow. Something I don’t mind when it’s maybe minus 20 degrees outside (yanno I’m from Minnesoda, you betcha) but that can wear thin in our warmer weather. Then I had an aha moment.
