So how about it guys, do you read magazines any longer? I get so much information online that they sometimes seem obsolete. And yet I manage to subscribe to a couple of food magazines because they are just so inexpensive. And they inspire me – when I manage to get them open and actually read them! That’s how I fell in love with the idea of this Moqueca Brazilian Seafood Stew – I saw it in Food & Wine Magazine.

See, my daughter was married recently, and her blended family consists of seven children ranging from toddler to teenager! I’m still a bit boggled by it all, but Southwestern Chicken Instant Pot Bowls are the kind of recipe I think almost anyone will love. The prep is nominal, the cook time short, clean up is a breeze and the results? Delish. These bowls are perfect for summer – or anytime.

Well, that happened when I made Shaking Beef – Bò Lúc Lắc not too long ago. In my defense my son was over, so he helped out a lot with the eating. But still, we just couldn’t leave it be!
Horchata Arroz con Leche (Rice Pudding)
A few weeks ago, Anna commented on my recipe for Horchata and asked where the recipe for my Horchata Arroz con Leche (Rice Pudding) that I promised to post was. (Anna, I hope you’re following so you see this, and sorry for the delay!) Horchata, if you’re not familiar, is a Mexican Aguas Fresca, a cool, creamy, cinnamony rice-based beverage. It’s so much better than it sounds; it’s absolutely delish, refreshing, but with a little substance.
New Orleans Creole Jambalaya
Mardi Gras is almost upon up, and Mardi Gras always makes me think of New Orleans and New Orleans always makes me think of Jambalaya. See how my mind works? It’s all about the food, lol! And while my fave Jambalaya Recipe is already on my site, one made with a roux (that’s said to be the Cajun-style) I really wanted to up my game this year and perfect a Creole-style Jambalaya, the tomato-y kind. Yeah, I’ had to get out of my (very delish) Cajun rut and make this New Orleans Creole Jambalaya for Mardi Gras this year.
