The first time I had Philly Tomato Pie, I was blown away! I didn’t think what was basically a big, rectangular pizza with no melty cheese could be so fabulously flavorful.

Cajun Chicken Flatbread Pizza
A while back, you might remember if you follow me (join in if you want; link-ups are to the right in the sidebar) ) I was all over these Grilled Blackened Cajun Chicken Breasts. I promised I’d give you a few more options on how to use that chicken; see I made a bunch and then spun off different meals, meal prep fashion. Today it hit me that before summer is over and our beautiful fall days turn into w-w-w-w winter…oh how I hate the thought of it….I’d better give you the final couple of recipes in the series. One of my absolute favorites of meals I made is this Cajun Chicken Flatbread Pizza.

Mushroom Ricotta Flatbread Pizza
Yanno what’s shocking sometimes? The amount of money that restaurants command on their appetizer or lunch (and sometimes dinner) flatbreads! I’ve seen them from $9.99 on up to $14.99, and I think it’s cray cray! I started making pizzas a long time ago (one of my faves is on my site) and love to make pizza as a way to use up a few leftovers. And often I’ll make extra of something just so I can make pizza. And the same goes for making flatbreads. That’s how this Mushroom Ricotta Flatbread Pizza came about.

Turkey Pizza?? You Betcha! BBQ Turkey or Turkey Artichoke Pizza
Pizza! Yeah, it’s something to get excited about especially at our house. Especially home-made. Coz where I live, it’s hard to get great great pizza and and the good places always seem to have a line and a long wait. Heck, even the mediocre places do.
