Fregolata Tart with Jam and Almonds
Fregolata – sounds fancy, doesn’t it? I love the way the word rolls off the tongue. I find myself saying it in an accent as I make it. This looks fancy, too, because it is made in a 10-inch tart pan. And it’s divine…there’s no need to give away any secrets, here, but this tart has an easy, pat in the pan crust and is made with jam. Yet, just any flavor of jam you have on hand (or you might want to use several, if you have a bunch of jam half finished!)

I remember when Quinoa first came on my radar, years and years ago. It was supposedly a “rediscovered” ancient grain and no one knew how to pronounce it (KEEN-wah), let alone cook it!! Well, it turns out that people have been eating Quinoa all along, even if we in the States haven’t, it isn’t a grain at all, it’s a seed and it IS possible to make Light Fluffy Quinoa in the Instant Pot or on the Stovetop.
