This is one of my fave dishes that leans toward the Asian side, and it’s a play on Thai Cashew Chicken. Actually, until recently, even tho I’ve been making this for decades, I didn’t even realize the distinction between the different types of Cashew Chicken. There are about a dozen made in different countries with different variations! Live and learn, amirite!
Simple Green Beans with Pecans & Gorgonzola or Bleu Cheese
For times when you’re looking to dress up a meal, these simple green beans, tossed with a bit of Gorgonzola or Blue Cheese are perfect. Tossed with the hot beans, the cheese melts a bit into a creamy sauce and the Pecans add a bit of crunch and interest. Best part: it takes practically no time at all.
Healthy Harvest Salad
I have some friends who always make marvelous salads to go with their dinners and that’s where I was first introduced to Harvest Salad. It’s so nice to have a glorious salad at a dinner party. It’s not only delish and brings a special touch, but I think it makes your guests feel pampered. Of course, I got the recipe, but over time I mixed it up just a bit into this Healthy Harvest Salad.
Candied Pecans (or Other Nuts)
I love this little recipe for sweet, crunchy, salty Candied Pecans. If you haven’t had Candied Pecans, they’re Pecans cooked and coated in a sweet syrup that hardens into a shiny coating. It transforms your plain old nuts into crunchy deliciousness.
Spanakopita
I love Spanakopita, and here’s why. In the small Iowa town I grew up in, we had one Greek family – the Grandmother lived across the street from us, and my sister is forever best friends with one of her grandchildren.
