I have a true confession. And don’t get too excited to hear some juicy tidbit. It’s just that I’ve never been a huge fan of chicken legs and/or drumsticks. It was these Instant Pot Barbecued Drumsticks that converted me. Done in the Instant Pot, this budget cut of chicken becomes absolutely luscious, beautifully rendered and moist. A short stint under the broiler with your favorite barbecue sauce crisps the skin and gives Instant Pot Barbecue Drumsticks lovely caramelization. If you’re not feeling the broiler, you can’t go wrong with tossing these on the grill to finish.
Creamy Cajun Stuffed Shells
Ok – we’ve had a couple of cooler days here in Minnesota, and I recently made a lot of my Grilled Blackened Cajun Chicken Breasts so I could use them to spin off several easy peasy meals that would be perfect for hot summer days. Sensational Cajun Chicken Salad
What actually makes this Sensational Cajun Chicken Salad Cajun? It’s the Grilled Blackened Cajun Chicken Breasts, but beyond that, I’ve used the kind of old-fashioned but always good Sensational Salad Dressing (it has Romano cheese in it) that hails from Baton Rouge, Louisiana. While a salad like this isn’t the traditional way to use the dressing, that dressing does make this salad sensational!
Grilled Blackened Cajun Chicken Breasts
I fell for it – even as I clicked on the link, I just knew things would end badly. How could it not? The title was “Grandma thinks she has 3 cats until grandson notices this!” Well about 27 clicks later, and I kept clicking because I kept thinking I HAD to be close, they just morphed into a story about someone that had a dog that turned out to be a bear and another family whose dog was actually a fox.
