A while back, you might remember if you follow me (join in if you want; link-ups are to the right in the sidebar) I was all over these Grilled Blackened Cajun Chicken Breasts. I promised I’d give you a few more options on how to use that chicken; see I made a bunch and then spun off different meals, meal prep fashion. Today it hit me that before summer is over and our beautiful fall days turn into w-w-w-w winter…oh how I hate the thought of it….I’d better give you the final couple of recipes in the series. One of my absolute favorites of meals I made is this Cajun Chicken Flatbread Pizza.

If you follow my site, and if not, you can check the right sidebar for all the options, you know I made up a mess of Chickpeas in the Instant Pot a while back. And while those Chickpeas are pretty amazing (they’re cooked with aromatics and herbs) I wanted to make something with them. Something quick, easy, and healthy. First of all, a disclaimer! This really isn’t a “Caesar” dressing in this Kale Salad With Creamy Caesar, but it IS a dressing that’s creamy and cool and punching with enough flavor to stand up to and tame any kale salad. It’s a little bold, a little brash, and as the kids would say, “Gangsta.” (That’s when the kids would say, “Mom, no one says that, lol!) I don’t think there could be anything more perfect with a Kale salad than this creamy dressing.
