My Easter this year looked quite a bit different than usual! It’s not the first time I’ve ever spent a holiday alone but it was the first time I’ve felt so isolated! That was until I realized that it was probably a pretty strange and weird holiday for most of us in the US and the world…so I know I’m not alone in this! Rather than a big ham, I had this beautiful brunch dish: Eggs Benedict Breakfast Casserole. Since it was just me, I only made and photographed a small pan of it. The recipe below is for the full version.
Instant Pot Southern Collard Greens
I love making greens of any kind in my Instant Pot, but the payoff in time is pretty great with these Classic Instant Pot Southern Collard Greens that usually take so much time and attention and love on the stovetop.
Easy Pineapple Glazed Ham
I remember way back when I first started cooking hams, they were so confusing. There were so many different kinds and there never seemed to be any standards and often no directions. Well, this ham, Easy Pineapple Glazed Ham is so easy, even if your ham has the directions attached, toss them out.
Old Fashioned Ham Bone Soup
Any time I bake a ham, I like to make soup with the bone, but if that ham is made in the late spring, say for Easter or Mother’s Day, you’ll probably want an option that is a little lighter than some of the traditional bean, pea or cheesy potato soups. How about a soup like Old Fashioned Ham Bone Soup? It can be made on the stovetop or in the Instant Pot.
Honey Mustard Glazed Ham
There are just a handful of holidays at our house that are graced with a ham, sometimes Thanksgiving, often Christmas, and maybe a holiday party. In the spring, Easter for sure, and now and then, Mother’s Day. That’s where this Honey Mustard Glazed Ham is coming in.
