I’ve been on a mission to post out some no effort Instant Pot recipes that I think my daughter and her fam will love, and I hope you might, too. See, my daughter was married recently, and her blended family consists of seven children ranging from toddler to teenager! I’m still a bit boggled by it all, but Southwestern Chicken Instant Pot Bowls are the kind of recipe I think almost anyone will love. The prep is nominal, the cook time short, clean up is a breeze and the results? Delish. These bowls are perfect for summer – or anytime.
Guatemalan Rice & Beans
One of my very favorite meals on my site is Guatemalan Chicken in Coconut Milk, Pollo en Leche de Coco. It’s the perfect thing for a cold, winter day – fast and easy and flavor for days! In the past, I’ve served the dish with rice cooked in coconut milk instead of how I first had it, with Guatemalan Rice & Beans.
White Chicken Chili Slow Cooker – Instant Pot – Stovetop
It’s been pretty bitter in the Twin Cities, but we’re having a little heatwave and are up to 12 degrees. Which would be great if we didn’t get about 7 inches of snow last night and even better if the high tomorrow wasn’t expected to be -5 with a low of -25 and worse on Wednesday. But that’s exactly the time you want soup! And even better a pretty much pantry soup (if your pantry is anything like mine) and not just any soup. You want this little White Chicken Chili Slow Cooker – Instant Pot – Stovetop number coz it’s going to warm you from the inside out!
Old Fashioned Three Bean Salad
I grew up on Old Fashioned Three Bean Salad and if you’re from the Midwest, I bet you did, too! There’s just nothing like fresh garden beans soaking up all the sweet, tangy marinade!
It’s a perfect summer salad for a potluck or to have on hand to fill out dinners or lunches. On a hot day, Old Fashioned Three Bean Salad is so cool and refreshing!
Spicy Pinto Beans Instant Pot or Stovetop
Ok, so what kind of blogger/friend would I be if I posted my homemade Mexican Pinto Bean Spice and then didn’t follow up with a recipe for my Spicy Pinto Beans Instant Pot or Stovetop? So here it is, and you can make these the old-fashioned way by simmering on the stove or the quicker newfangled Instant Pot version. I vote for quicker, but I have an Instant Pot and an issue with delaying gratification.
