I had to make Chicken Corn Chowder a while back for a friend who was having surgery. And then I had to make it again and again, just to test it, mind you. And then, oops, I did it again, it’s that good!
It snowed again. Yep. Not on Easter (and April Fool’s Day) but the day before. It was like a cruel joke, and it put me right into comfort mode. Anyway, here’s some of that comfort, Easy Cheesy Ham & Potato Chowder. It’s wrap up in a throw with your big fuzzy socks and eat from a mug comfort!
So last week I posted Philly Cheesesteak Sliders (in honor of the Philadelphia Eagles – that’s before I knew how badly our Vikings were going to be trounced!) This week, I thought what the heck. New England Clam Chowder was in order to represent the New England Patriots. For the Superbowl, eh? You betcha. We’re hosting it in Minneapolis this year, so that’s exciting. And whether the Eagles or the Patriots win, you’ll have a win if you serve this New England Clam Chowder.
There’s nothing that says the end of summer more (except maybe of a glut of tomatoes – have you seen all my tomato posts, lol!) than the end of Sweet Corn season. It’s a sad day when the abundance of corn withers away to a dribble, then there’s nothing left but a few lonely ears in the bottom of the huge boxes that stand in so many produce departments. That’s when I think of my End of Summer Corn Chowder.
This Chipotle Chicken Chowder has become a favorite of mine, which is a bit of a shame since someone in my family (no names mentioned to protect the guilty) won’t touch soup. And they’re missing out (and making me miss out) on having Chipotle Chicken Chowder in a regular rotation!
