I’m a bit at a loss as to how to describe Puerco Con Chile Verde! Tender chunks of braised pork in a slightly spicy, slightly smoky green tomatillo sauce is descriptive but doesn’t quite give justice. Guisado de Puerco con Tomatillos or Carne de Puerco en Salsa Verde rolls off the tongue with a bit more flair.

I absolutely love this Substitute for Chili Packet Recipe. That’s because the spices and herbs are based on my favorite Chili recipe. I can’t claim that it might taste exactly like any of the commercial packets you might buy, but I can claim this will make a perfectly delish pot of chili…great flavor, not too spicy and family-friendly.

There was a time when the most popular Chili was this old-fashioned American Chili, different than today’s trendy versions. There was a time when Chili was made with simple ingredients and was served as a family meal, not a culinary adventure. A time when Chili was saucy enough to add a few crackers – and saucy enough that a spoon was used for eating, not standing up in your Chili. I miss that Chili!

Old School Chile Rellenos
Old School Chile Rellenos have always topped my list of favorite Mexican or Southwestern meals. A mild poblano, artfully stuffed with cheese, dipped in an egg batter, fried and served over a bed of sweet/sour tomato sauce is something I crave to this day.
