Every year I go through the same thing. I see the small signs of fall coming, but I just ignore them. I never want summer to end and I never want to think about our Minnesota winter to come. But one thing that’s a sure sign of that impending change of seasons is what I want to eat. Well, first of all, I think Soup! But I also love a weekend morning to whip up something for breakfast. Something a little special. Something I might not bother with on a summer morning. Something like a Berry Souffle Pancake.
I’m going to call this recipe for Sheetpan Strawberry Shortcake the last “hurrah” of summer. And you’ll notice I didn’t just stop at Strawberries for this shortcake and tossed on a few blueberries and raspberries, too. Really you can use any berries or for that matter, whatever fruit you think might be good on it!
I hope everyone had a happy (and safe) 4th of July. I had all kinds of great blogging plans for some spectacular Ice Cream Cone Cupcakes and a few other party recipes but then I got derailed. Completely foiled. That just happens sometimes at the folks. I make something and it disappears before I can even get a photo…let alone formally serve it. I guess that’s a compliment, lol!! Those posts will be coming soon because I plan on posting lots of quick fun summer food, so stay tuned. They’ll still be perfect for all the summer parties yet to come, but in the meantime, enjoy these Blackberry Yogurt Swirl Popsicles.
Pina Coladas. They’re so good. Sweet, but good. What if you could make a fruit salad that had all the flavor (but none of the booze) of a Pina Colada? I’d drink to that. And the fruit in this salad, especially the bananas and pineapple, play so nicely with the lovely coconut flavors of the Pina Colada mix. Whoaa – mix? Yeah, mix.
You know what I love? Smoothies. And probably you do, too? But what I don’t love? Putzing with them. Adding a bit of this or that, trying to get them thick and luscious but still sippable through a straw.
