So it’s probably not a leap to imagine I might post another Halloween Treat, and maybe even one made with popcorn, like these Halloween Marshmallow Popcorn Bars.
I’ve been kicking the idea of S’mores Bars around for a long time. Actually, years ago, I used to make some that had Golden Graham Cereal and they were really fun. Maybe that will be a post someday. But today, I wanted my Best Easy S’mores Bars to be graham crackers and chocolate and marshmallows, just like a real S’more.
I had the idea of making Chocolate Meringue Brownie Cake for ages before I made the leap, and I think this has got to be the pinnacle of Chocolate Meringue Brownie Cakes. I hope you’ll leap with me because this cake is everything!

I suppose these bars should have a better name. They’re luscious, creamy and dreamy from the silky custard topping, just bursting with blueberries, all the way down to the gorgeous shortbread crust.
When my son was a teenager and became interested in working out, he immediately “sparked” to the idea of “energy” bars! He’s not alone; energy bars are a huge industry, many full of heavily processed ingredients. A black mark in my book. That they’re expensive is a double damn. That so many present as healthy when they’re way over the top in calories? Well, that’s a triple damn! Why not just have a piece of cake and be done with it!!
Hersheys Ultimate Double Chocolate Brownies are an unabashed brownie, a bit forward, maybe even impertinent in their rich, chocolate taste. If these brownies were a person, they’d be Melissa McCarthy in Identity Crisis. A bit loud; bordering on obnoxious and a little messy around the edges.
