When I was younger, I wasn’t a huge potato salad fan. Even my Mom’s, and she went the whole route with homemade mayonnaise and everything. But I appreciate it more, now, and I especially appreciate it when its a lot easier than Mom’s. And I appreciate it when it’s this creamy, Classic Potato Salad, Instant Pot or Not.
I gotta say I’ve never been a huge fan of out standard American potato salad. Of course, that never stops me from eating it if I’m at a barbecue or potluck, but sometimes I wish there was something a little different. Something that wakes up the taste buds. Have you ever had a really good homemade German Potato Salad? Even if you haven’t, you might have seen it at the store, maybe at the deli, and possibly depending on where you live, in a can! If you’ve tried any of those products (no offense to whoever is making them) you might not really “get” what German Potato Salad is. It really has to be homemade to be good.
I admit to being surprised that I liked this Bacon Ranch Potato Salad so much, and so did the folks. And I have my lil’ sis (who I no longer consider evil for suggesting such a salad knowing I’m not a Ranch fan) to thank.
