Homemade Canadian Donair
These days simple do-able recipes with a high pay off have been my mainstay. Do Homemade Canadian Donair qualify? I think so. And while these sandwiches might look restaurant quality (and the idea DID come from one, Occo Kitchen & Bar, I saw on Diner’s, Drive-Ins & Dives and here’s the video) these lovely Canadian versions of the Gyro are much easier than you’d guess,. especially if you view it as a mostly a “make ahead” meal. Gotta love that!

Shredded Chicken (Pollo Mechado) Arepas
I’ve been on a little Arepa kick lately – I made these Shredded Chicken (Pollo Mechado) Arepas which were fabulous, then went on and revisited the other Arepas on my site, my Chicken Avocado Arepas. So of course, I needed to revise my post on how to make the actual Arepas, which are the little “buns”.

Copycat Panera Steak & White Cheddar Panini
In an unexpected twist, I fell in love with the Steak & White Cheddar Panini at Panera Bread. See, I have another “go-to” sandwich but when I was out with a friend, I followed her lead. Yeah, I’m a rule breaker these days! A rebel! It was so good, I’m glad I got out of my “rut” and I recreated it here, for you. So here’s my Copycat Panera Steak & White Cheddar Panini.

Pickled Red Onions
I love making fabulous little somethings to spark up dinner, especially when that fabulous little something is as delish and as easy as these classic Pickled Red Onions.
