If you’re looking for an easy, no fuss way to get breakfast on the table, look no further than Make-Ahead Apple Baked Oatmeal. There is something to be said of springing (ok, stumbling, #not a morning person) into the kitchen on a cold, frosty winter morning, getting the oven going and baking a panful of warm, apple-y cinnamony make ahead deliciousness.
Do y’all know Nathalie Dupree? She’s like the queen of Southern cooking; the Southern Julia Child. So when a friend (the same friend who introduced me to Panera’s Steak & White Cheddar Panini and many other meals & recipes over the years – she has great taste!) mentioned that Nathalie Duprees Meatloaf was a family favorite, I couldn’t wait to try it. It’s actually been on my must make list for a while and I gotta say it’s just the perfect thing to make on a cold winter weekend.
So awhile back, I made a bunch of Steel Cut Oatmeal in my Instant Pot, looking for just the right combination of time & ingredients to get my Best Instant Pot Oatmeal. And I love oatmeal and ate a lot, but still had some leftover! So I made a few things with it. Some cookies that were a total fail, a little experiment with a copycat Taco Bell meat recipe (yuck!) and these Leftover Oatmeal Muffins. Well, the third time was a charm.

Fall. I’m not too excited about it this year. We’ve had days of heavy storm and rains and during one of the storms, a huge willow on the city’s property that butts up to my yard came down, taking about five of my good sized oaks with it. I’m looking forward to things clearing up and those coolish but still warm days when the sun is shining and the leaves crunch underfoot. And I’m looking forward to eating my Autumn Almond Pear Granola.

I’m always making granola of one type or another but never seem to actually post recipes. Maybe because in real life I’m more of a dumper than a measurer, at least when I make granola. Classic Quaker Oats Meatloaf really is an old-school classic meatloaf. Just plain cookin’ & hardly anything to the making it of it at all. It’s one of those recipes that really makes you appreciate the taste of FOOD.
My Dad’s been asking for Oatmeal Cookies for longer than I care to admit. And we had three, yes, three cartons of Old Fashioned Oats in the cupboard. And so here they are, the best Oatmeal Cookies, ever! And my Dad thinks so, too!! 🙂 It always tickles me pink to get a thumbs up from my Dad!
I love this simple recipe for Oatmeal Jam Bars – it’s a super easy recipe, a classic, really, and a great way to finish up any jam that might be lingering in the fridge. These are made from a fig compote and fig compote just seems so right for fall, but any jam will do. You can hardly go wrong.
Do you ever open up a magazine and want to make everything in it? That’s how I felt about the July/August issue of Midwest Living. I recently whipped up a variation of their Vanilla Orange Cake with Apricots but it was this recipe, this Chocolate Cherry Crisp, that I couldn’t get out of my mind.
When my son was a teenager and became interested in working out, he immediately “sparked” to the idea of “energy” bars! He’s not alone; energy bars are a huge industry, many full of heavily processed ingredients. A black mark in my book. That they’re expensive is a double damn. That so many present as healthy when they’re way over the top in calories? Well, that’s a triple damn! Why not just have a piece of cake and be done with it!!

Way back in the late ’70’s – maybe early ’80’s – I fell in love with Swiss Muesli, namely, Familia cereal. It was pricey, and I looked at the ingredients on the box and decided that not only could I make my own for a lot less, but I could customize it to my own tastes and make it even healthier!
