Do y’all know Nathalie Dupree? She’s like the queen of Southern cooking; the Southern Julia Child. So when a friend (the same friend who introduced me to Panera’s Steak & White Cheddar Panini and many other meals & recipes over the years – she has great taste!) mentioned that Nathalie Duprees Meatloaf was a family favorite, I couldn’t wait to try it. It’s actually been on my must make list for a while and I gotta say it’s just the perfect thing to make on a cold winter weekend.
So awhile back, I made a bunch of Steel Cut Oatmeal in my Instant Pot, looking for just the right combination of time & ingredients to get my Best Instant Pot Oatmeal. And I love oatmeal and ate a lot, but still had some leftover! So I made a few things with it. Some cookies that were a total fail, a little experiment with a copycat Taco Bell meat recipe (yuck!) and these Leftover Oatmeal Muffins. Well, the third time was a charm.

Fall. I’m not too excited about it this year. We’ve had days of heavy storm and rains and during one of the storms, a huge willow on the city’s property that butts up to my yard came down, taking about five of my good sized oaks with it. I’m looking forward to things clearing up and those coolish but still warm days when the sun is shining and the leaves crunch underfoot. And I’m looking forward to eating my Autumn Almond Pear Granola.
