First of all, this is only a very loose interpretation of a Vietnamese Pork Noodle Soup. And no, it’s not Pho and not based on Pho. It’s just a lovely noodle soup, very simple, flavored with a good broth, a dash of fish sauce, some tomatoes & scallions, pork and a few herbs. And a good squeeze of lime.
