So how about it guys, do you read magazines any longer? I get so much information online that they sometimes seem obsolete. And yet I manage to subscribe to a couple of food magazines because they are just so inexpensive. And they inspire me – when I manage to get them open and actually read them! That’s how I fell in love with the idea of this Moqueca Brazilian Seafood Stew – I saw it in Food & Wine Magazine.
Mediterranean Salmon Salad
Our summer has gone from cold, cool and rainy to hot, humid and rainy in a snap of the fingers! I don’t know about you but I just go limp when it’s too hot and humid. I don’t want to do anything, I don’t want to eat and I sure as heck don’t want to cook. And then when I do get hungry? I make bad choices. My solution? Make a great big ol’ salad and top it off with a quick & easy protein and a fabulous dressing. And so here’s my Mediterranean Salmon Salad.
Not Grandma’s Salmon Loaf
As a child, I don’t think anything struck more terror in my heart than learning dinner was Grandma’s Salmon Loaf. It was on regular rotation during both Advent, the weeks leading up to Christmas, and Lent, before Easter, when there were many days of fasting, abstinence, and obligation when meat wasn’t served. I’ve always thought about making a post for that Salmon Loaf, but just never could do that to y’all – or to me! So that’s prompted me to come up with Not Grandma’s Salmon Loaf!
Salmon en Papillote
So January has rolled around, and so has my annual attempt to eat healthy. Are you with me? At least for a while, anyway? Besides, this Salmon en Papillote is so lovely, you won’t even care that it’s healthy. j/k – kinda!
