I’m always looking for simple recipes to teach my son and his girlfriend and dredged up these easy, cheesy bacon foil-baked potatoes. My Mom made these all through the 70’s for us kids, and I made them often enough for mine! It seems I’ve gotten away from them in recent years, but that first familiar bite! Oh, yeah!
First, I have to tell you the story about how I found the Hashbrown Omelette, or if you’d like to call it, the omelette of awesome deliciousness. This omelette is a layer of beautifully cooked hashbrowned potatoes topped by a thin layer of egg, cheese, ooey and gooey, & a filling of your choice. Then, the whole works is folded over into a crispy, crunchy, on the outside, cheesy, creamy, on the inside, breakfast.

Once upon a time, I worked in a restaurant kitchen for a while when I was just a baby-faced teenager. I was in between jobs and since I had waitressed before I thought it would be a quick way to make some money – the problem was I was in Colorado and so I wasn’t legal to waitress. They took me in as a prep cook and I learned a few tricks. One of them was how to make these glorious Baked Potato Hash Browns.
