I’m always looking for simple recipes to teach my son and his girlfriend and dredged up these easy, Cheesy Bacon Foil Potatoes the other day. I hadn’t made them in ages, and with that first bite, I wondered why, oh why not! I thought maybe you might like them, too. I love not only how fabulous they are but how easy they are and I’m never one to complain about virtually no cleanup!
First, I have to tell you the story about how I found the Hashbrown Omelette, or if you’d like to call it, the omelet of awesome deliciousness. This omelet is a layer of beautifully cooked hash browned potatoes topped by a thin layer of egg, cheese, ooey and gooey, & a filling of your choice. Then, the whole works is folded over into a crispy, crunchy, on the outside, cheesy, creamy, on the inside, breakfast.
Green Chili Breakfast Burritos. I’m wild crazy about them and so pretty much anybody I’ve made them for, including the whole family – so much so that when someone comes for a visit I stock up the freezer and usually end up sending some home with my guests. I love sharing with them, so now I’ll share them with you!
Once upon a time, I worked in a restaurant kitchen for a while when I was just a baby-faced teenager. I was in between jobs and since I had waitressed before I thought it would be a quick way to make some money – the problem was I was in Colorado and so I wasn’t legal to waitress. They took me in as a prep cook and I learned a few tricks. One of them was how to make these glorious Baked Potato Hash Browns.
A recipe I found in an old cookbook that featured Bed & Breakfasts from around the country, Potato Cheese Strata, is one of my go to recipes when I have a house full of company.
