I have other White Chicken Chili recipes here, so I’m not really sure how I got inspired to make this one. A hint of fall coming, maybe? Yep. I said it. Fall. I’m not too happy about fall coming but I’m glad I made this Easy White Chicken Chili. It’s seriously delish.

I don’t know about you, but I love, love, love me some Chicken Tortilla Soup. Just put it in front of me and I’ll eat it – no questions asked. Anytime I go out and see Chicken Tortilla Soup on a menu, I hafta order it. Doncha hate it when it comes in a little tiny cup? Well, that won’t be a problem when you make this at home, and you can make it on the stovetop or in the slow cooker!

This Steak Chimichanga with Green Chili Verde Sauce is one of my favorite recipes, and it came from leftover steak. Who has leftover steak, anyway? I don’t know about you, but certainly not at my house, where steak is a bit of a rarity. At my folks’? Yeah. Quite frequently. A love of beef (they live in ranching country) and smaller appetites often lead to a bit of steak that could easily languish in the fridge.

Puerco Con Chile Verde – Pork Green Chili Stew with Tomatillos
I’m a bit at a loss as to how to describe Puerco Con Chile Verde! Tender chunks of braised pork in a slightly spicy, slightly smoky green tomatillo sauce is descriptive but doesn’t quite give justice. Guisado de Puerco con Tomatillos or Carne de Puerco en Salsa Verde rolls off the tongue with a bit more flair.

Green Chili Breakfast Burritos. I’m wild crazy about them, and so is anybody I’ve made them for, including the whole family. It’s a burden, I tell you, but a welcome one. When anyone comes to visit overnight, I have an excuse to make these and stock up the freezer.
