It’s been pretty bitter in the Twin Cities, but we’re having a little heatwave and are up to 12 degrees. Which would be great if we didn’t get about 7 inches of snow last night and even better if the high tomorrow wasn’t expected to be -5 with a low of -25 and worse on Wednesday. But that’s exactly the time you want soup! And even better a pretty much pantry soup (if your pantry is anything like mine) and not just any soup. You want this little White Chicken Chili Slow Cooker – Instant Pot – Stovetop number coz it’s going to warm you from the inside out!
You might remember not too long ago, I was going through some of my “old-school” recipes and came up with my Corn Patch Corn Casserole? Well, not too far from that recipe was my recipe Green Chile Egg Bake. This is another recipe that was popular at any work food day when I lived in Denver, although it screams breakfast and/or brunch to me.
I have other White Chicken Chili recipes here, so I’m not real sure how I got inspired to make this one…a hint of fall coming, maybe? Yep. I said it. Fall. I’m glad I made this Chili, though, because Easy White Chicken Chili’s seriously delish.
I don’t know about you, but I love, love, love me some Chicken Tortilla Soup. Or some Turkey Tortilla Soup. Or probably ANY Tortilla Soup. Just put it in front of me and I’ll eat it – no questions asked.
This Steak Chimichanga with Green Chili Verde Sauce is one of my fave recipes and it came from leftover steak. Who has leftover steak, anyway? I don’t know about you, but certainly not at my house where steak is a bit of a rarity. At my folks? Yeah. Quite frequently. A love of beef (they live in ranching country) and smaller appetites often lead to a bit of steak that could easily languish in the fridge.
I’m a bit at a loss as to how to describe Puerco Con Chile Verde; tender chunks of braised pork in a slightly spicy, slightly smoky green tomatillo sauce is descriptive but doesn’t quite give justice. Guisado de Puerco con Tomatillos or Carne de Puerco en Salsa Verde rolls off the tongue with a bit more flair.
Denver Green Chili is a regional specialty and is found all along the Colorado Front Range. This Denver Green Chili, my secret family recipe, made in the classic Denver style, is a secret no more. Rich and silky, just thick enough to smother a burrito and gently pool, it has just the right amount of heat. Enough to catch your interest, to be sure, but not enough to cause any distress. Just marvelous flavor that will tickle your tongue, then wrap around and settle a bit toward the back of the throat.
