For ages, I’ve wanted to make Salmon Rillettes and this year I finally got around to it. It’s a great time right now, during Lent to buy any fish or seafood! So I tried a few recipes and realized that Salmon Rillettes (at least the recipes I’ve tried) were nothing more than a fancy French name for Cold Salmon Salad!

Creamy Salmon Piccata
I’m just nuts about my classic Italian leaning Old School Chicken Piccata, so it stands to reason I’d be crazy about this twist, Creamy Salmon Piccata. If you love fresh, lemony, garlicky flavors and you love salmon, I think this will be a winner for you! The touch of cream in the recipe, btw, rounds out those flavors and takes the whole dish next level.

Kale Salad With Creamy Caesar
First of all, a disclaimer! This really isn’t a “Caesar” dressing in this Kale Salad With Creamy Caesar, but it IS a dressing that’s creamy and cool and punching with enough flavor to stand up to and tame any kale salad. It’s a little bold, a little brash and as the kids would say, “Gangsta.” (That’s when the kids would say, “Mom, no one says that, lol!)
