Fall comes, the leaves turn and at that first temperature drop, I seem to crave comfort food. I actually have a list. Well, not a formal one, but one in my head, and Beef & Barley Soup ranks high on that list.
AARP. Who knew? I’ve been a proud member, according to my card, since 2015, but looking back I wish I would have signed up earlier.
Beef Barley is a soup that hasn’t gotten it’s due, perhaps because the recipe most of us know is from the back of the Barley box. Good fare, not great. And while I love a good Beef Barley made with a home-made beef stock, it’s incredibly hard to find good bones here, terribly expensive, and frankly, a lot of work for a simple soup. My solution? A lovely Beef Barley Soup made with a “doctored” up broth.
Diners, Drive Ins & Dives is on Netflix this season and this episode features the Sparrow Tavern in Astoria, New York – a run down rock & roll type bar with gourmet style. One of their star items was the Sparrow Veggie Burger and even the carnivores were going on about it. After I made them, I can see why – they’re flippin’ AWESOME! A bit of work, but the best Veggie Burger I’ve ever had!
