A bit of cooked Barley was the “by-product” of my Healthy Lemon Ginger Barley Water recipe awhile back. Well, if you know me, you know I try to waste nothing, and sure didn’t want to waste a morsel of wonderful, chewy, nutty Barley. (I love it, and so should you, btw! It’s really good for you!) And so I went on a quest and that quest ended in this Salad with Smoky Sheet Tray Roasted Vegetables & Barley. It’s a lot to use a cup of Barley, huh?!

It turns out that Barley Water isn’t just a Scottish tradition but has been made since ancient times and has been shared by many cultures.
Fall comes, the leaves turn and at that first temperature drop, I seem to crave comfort food. I actually have a list. Well, not a formal one, but one in my head, and Beef & Barley Soup ranks high on that list.

Beef Barley Soup seems to have never gotten it’s due. Maybe because most of us use the recipe on the back of the box. Good fare, not great. I love a good Beef Barley made with a home-made beef stock, but bones are hard to find and pricey. My solution? Make a great soup with a “doctored” broth.
Diners, Drive Ins & Dives is on Netflix this season and this episode features the Sparrow Tavern in Astoria, New York – a run down rock & roll type bar with gourmet style. One of their star items was the Sparrow Veggie Burger and even the carnivores were going on about it. After I made them, I can see why – they’re flippin’ AWESOME! A bit of work, but the best Veggie Burger I’ve ever had!
