Those of you who know me know I’m kind of a sucker for Mexican food. Or Southwestern. Or Tex-Mex. When I saw these old school Tex-Mex type enchiladas pop up in an email from the New York Times, I was all over it. Enchiladas con Carne from El Real Tex-Mex in Houston.
It might have been the name that drew me in. The Cheese Zombie. It was the wholehearted endorsement of those who had grown up on Cheese Zombies that hooked me. A Cheese Zombie is a sheet tray of home-made bread layered with an oozy, gooey American cheese and Cheese Zombies are sooo much better than they sound.
If you’re looking for a dynamite casserole, one that practically screams “comfort” and one that’s easy to make, serves a crowd and comes in at a budget, this is the one, Cheesy Chicken or Turkey Noodle Casserole.
