I’m always looking for fun summer salads. The kind that is perfect to serve at home and/or take to a cookout or party. This Avocado Tomato Bacon Pasta Salad has a little Southwestern flair and fits the bill. Best of all, the fabulousness just doesn’t stop with this Avocado Tomato Bacon Pasta Salad.
Awhile back, way back when, I made Slow Roasted Tomatoes, a technique I stole from Bon Appetit. They are more fabulous than words can say, but when I say slow-roasted, I mean six to eight hours in the oven slow. Something I don’t mind when it’s maybe minutes 20 degrees outside (yanno I’m from Minnesoda, you betcha) but that can wear thin in our warmer weather. Then I had an aha moment. What if I made Slow Roasted Cherry Tomatoes? I figured I’d have all the flavor and a lot less time invested. Win. Win.
I’ve been on a little Arepa kick lately – I made these Shredded Chicken (Pollo Mechado) Arepas which were fabulous, then went on and revisited the other Arepas on my site, my Chicken Avocado Arepas. So of course, I needed to revise my post on how to make the actual Arepas, which are the little “buns”.
This is the Chili you want when you want a huge pot o’ chili. When you want to serve a crowd of adults who love spice and love chili, maybe for an event. And even though this is named Game Day Brisket Chili, you don’t have to reserve this big pot of seriously spicy, meaty chili only for a Game Day (although this will shine at a Superbowl party or Tailgate event) and I actually have other barbecue type options for the meat you can sub in for the Brisket.
We’re sitting here in the Twin Cities just waiting to get slammed by a blizzard, and we’re not alone. There’s a whole swath across the upper Midwest. I keep checking the weather but it’s so bright and sunny it’s easy to be in denial. Maybe they’re exaggerating. Maybe we’ll get missed! One thing I do know? We’re having these Oven Roasted Cherry Tomatoes & they’re like a breath of sunshine no matter what the weather and what the time of year.
