Last week when I made my Simple Steak Tacos, I mentioned I used Fajita seasoning to spice things up a bit. Actually I said I used my Home-madeĀ Fajita Seasoning. It’s super simple to make and you’ve probably got just about everything on hand to toss it together.
Cajun Gastrique
“What the heck is Cajun Gastrique?” you might ask. At least I asked. The waitress was stumped and came back with “a reduction of vinegar and Cajun spices.” Ok, I thought to myself, “La di da. I’m going to be sorry I ordered Cajun in South Dakota,” but ordered Shrimp and Grits with a Cajun Gastrique anyway!

Home-Made Pickling Spice
I probably have a pre-ordained destiny to be a “pickler.” That may not be a word, lol! See, my Grandma and my Mom used to make pickled beets (not huge amounts of “putting up” but a jar or two for the family.) So it just seemed “normal” to me to do a little pickling here and there. And since I love cooking, over the years, I’ve expanded my repertoire. That led me to come up with a “signature” Home Made Pickling Spice.
Homemade Seasoning Salt
Do most kitchens have a jar of seasoning salt (or as I recently learned, Seasoned Salt is what it is actually named) tucked away somewhere? Or maybe not even tucked away. For you, it might be front and center. For years, I didn’t. See, I had a deep suspicion of some of the ingredients and that held me back as well as the rather “generic” flavor.
