Winter has finally settled in with a vengeance here in Georgia; we’ve been lucky with pretty warm weather until now. It’s triggered me to make a big old pot of Mexican Chicken soup to get me through.
Southwestern Rice and Beans
Here’s an easy side or main, this one-skillet Southwestern Rice and Beans. As you might guess, it’s chock full of Southwestern flavors, some of my favorites, and maybe yours, too?
Easy Six Can Soup
Hello Frugal Foodies! The first time I had this Easy Six Can Soup was years ago at a friend’s. I was visiting, stayed on for dinner, and of course, had to ask for the recipe for this awesomeness!
Pulled Pork Black Bean Burritos
If you’re looking for a fabulous budget-friendly recipe look no further than these Pulled Pork Black Bean Burritos. They start from humble beginnings, a bit of pulled pork, but never in a million years would you guess these are quickly tossed together from leftovers!
Mexican Shredded Chicken Stuffed Peppers
I’m food crushing on my Mexican Shredded Chicken Stuffed Peppers! I’ve decided they’re like the perfect dish for this time of year when it’s not quite but almost fall weather and we’re alternating between hot, sunny days and cool crisp ones with a good amount of cold, drizzly wet and gloomy days sprinkled in here and there. Actually, I think there was one day where I started out with the heat on (mostly to dry the house out and take off that chill) and ended up turning on the air! It’s been that crazy.
