I remember way back when I first started cooking hams, they were so confusing. There were so many different kinds and there never seemed to be any standards and often no directions. Well, this ham, Easy Pineapple Glazed Ham is so easy, even if your ham has the directions attached, toss them out.
I don’t know if it’s a good thing or a bad thing that watermelon is available pretty much all the time, these days. See, I kind of miss the the anticipation and the risk, waiting until mid to late summer & hoping for watermelon by the Fourth of July! On the other hand, those smaller watermelons I’ve seen at the store are always good, a manageable size and I can have watermelon anytime! They were perfect thing to use for this Watermelon, Pineapple Salsa.
I think this is my new favorite fruit salad, Honey Ginger Lime Fruit Salad. It’s light, refreshing and has just enough sumpin’ sumpin’ to complement the fruit and enhance the flavor. It really does bring out the best in just about any fruit used.
Ok, so I hate January. And February. And I’m not too wild about March, either. That’s because I live up Nord in Minnesota, you betcha, and while December is kind of exciting, by the time January rolls around, I’m just about done with it! But you know what I love about January? Pineapples! You heard me right! And I now love these Grilled Hawaiian Pineapple Pork Chops.
Ok, it’s February, now. I don’t know what it’s like where you live, but it’s cold, here, and we have feet of snow. Yeah, feet. And it’s just the time of year when it gets old. So I wanted a little pick me up. Something with a little tropical flair? Maybe something with pineapple! How about Pineapple Chicken?
