Ok – we’ve had a couple of cooler days here in Minnesota, and I recently made a lot of my Grilled Blackened Cajun Chicken Breasts so I could use them to spin off several easy peasy meals that would be perfect for hot summer days. And I made a few but then I deviated! I couldn’t resist making these gorgeous Creamy Cajun Stuffed Shells with that final bit of chicken. I’m so excited about them I couldn’t hold off for a more appropriate season – these are probably going down as one of my most fave recipes ever on my site!
I don’t think anyone can deny that I can be a bit of a food snob now and then. That’s made me avoid making certain dishes in my Instant Pot. Namely, Instant Pot Spaghetti. I took the plunge after visiting my daughter. When I got home, I decided to put out a little series of super easy, family-friendly Instant Pot meals to help Jess feed her hungry hoard. I gotta say, I’m eating my words over this recipe! Or I would be if I weren’t stuffing my mouth with this Simple Instant Pot Spaghetti!
If you’re a follower, ya all know by now that I was down in Atlanta at the end of May, early June for my daughter’s wedding. I miss those guys so much, Jess & Brandon and their combination of seven (not a typo – seven) children. And I vowed to get Jess going with the Instant Pot I got her one Christmas, just to try to make life a bit easier. Well, it doesn’t get much easier than this Easy Cheesy Chili Mac, which can be made in the Instant Pot or in the standard old fashioned way, stove and oven.
Raise your hand if Macaroni & Cheese is one of your ultimate comfort foods! I mean a real, deal Macaroni & Cheese, made with a blend of cheeses you love. And what if you can get it on the table in minutes, with no heavy pots of boiling water to heat up your kitchen, constant checking for the perfect al dente on the noodles and the steam bath you get when draining that pasta? Step up to Instant Pot Macaroni & Cheese. It’s a game-changer.
Spring has finally started to spring here! I have a shoot from a daylily coming up. And of course, raking and clean up (with some snow still in the yard) is happening, thanks to my son. We’re hoping to get some of the leaves up before the spring rains hit – a horrible job since I couldn’t rake last fall. But with spring comes renewed life & renewed hope – and this Fresh Pea Pesto.
