Firstly, to my children: These are not your Momma’s pancakes. I was the worst Mom in the morning and I apologize. I’m surprised you didn’t starve to death or die of malnutrition. And now, here I am making pancakes (and all kinds of breakfasty things) for the folks all the time. Secondly, even when I did make pancakes, they weren’t these Lemon Ricotta Pancakes.
One Saturday morning, I woke up to two beaming youngsters. My daughter had pulled out a couple of cookbooks and found this recipe in an old Betty Crocker cookbook. To my mind, it’s the first thing she ever really made, and she was around 10. I’m still boggled! The logistics of making and cooking pancakes is a lot for a child that age. Heck, it’s a lot for me (not a morning person.)
Awhile back, I made the most marvelous Strawberry Cheesecake Pancakes for Mother’s day. They were awesome. They were fabulous. But they set off some kind of deep seated craving for more brunch! More and more brunch! I want brunch all the time, now! Do you ever get like that – just go on a kick like a runaway train?
Doesn’t Mother’s Day just scream “brunch” to you? And every brunch has to have a centerpiece. Something kind of special. Something memorable. Maybe Pancakes that are fit for a Queen – or a Mother. Something like Strawberry Cheesecake Pancakes.
It’s no secret that I’m not a morning person. And I’m really not that into much breakfast food. So I’m not likely to be standing around the stove flippin’ pancakes at 7:00 a.m. No flippin’ way! But there are some breakfasts I can get behind and this Apple Oven Pancake is one of them.
These little silver dollar pancakes will never be mistaken for your typical American flapjack. The outside is beautiful with just the right amount of crisp, the inside, light and airy. Ethereal. Insanely good, really. It’s almost an insult to call these pancakes!
