I came across an idea that blew my mind – and maybe it will do the same for you! It’s basically a savory rather than sweet Oven Pancake (sometimes called a Dutch Baby, German Pancake or a Puffy Pancake.) I was just thinking about going to bed when I had to pivot and try it out! And thus was my Mushroom Kale Oven Pancake born!

Every year I go through the same thing. I see the small signs of fall coming, but I just ignore them. I never want summer to end and I never want to think about our Minnesota winter to come. But one thing that’s a sure sign of that impending change of seasons is what I want to eat and how I want to cook. And today I was thinking Berry Souffle Pancakes.

A while back I made my Perfect Pumpkin Spice Pancakes (those are so good, I want them all the time!) and wanted some syrup. But I don’t usually buy grocery store syrup, and I just wasn’t feeling maple syrup at all. Besides, that can be super pricey. And for some reason, the idea of a bacon syrup popped in my head. So here’s my Bacon Pecan Syrup…it’s a little special for a fun brunch experience.
