Does anyone remember the cheesy, garlicky deliciousness of that old Hot Artichoke Dip that was so ubiquitous in the ’90s? It was basically artichokes, Parmesan, mayonnaise, and garlic and it was crazy, crazy good. I’m using all those flavors and more in this moist (sorry to say moist- but it is) luscious, creamy Hot Artichoke Dip Chicken. And it’s even crazier gooder than the dip, I swear. This is wanna lick your plate clean good. Hide any leftovers good. Get up in the middle of the night, alone so you don’t have to share, and eat them good!
Skillet Roasted Lemon Chicken
There’s one simple, no-effort complete skillet meal I love beyond all others – Greek Skillet Roasted Lemon Chicken. The chicken turns out beautifully, the flavors are amazing, and those potatoes steal the show!
Grilled Asparagus and Quinoa Salad
A series of mishaps around a Chef’s published recipe (some hers, some mine) turned out to be quite the happy accident. The result though is nothing less than a fabulous alchemy of flavors: lightly grilled smokey asparagus, punchy Kalamata olives, shaves of nutty Parmesan and nutty Quinoa form the base of Grilled Asparagus and Quinoa Salad. Really this is a main meal, maybe a brunch meal – the term Salad doesn’t do it justice.
Chicken Italian – Good, Gooder & Goodest
Chicken Italian, cheesy with tomatoes, at it’s most basic is a five-minute toss together weeknight save. Modified just a bit, and it’s a fantastic dinner. Add in a few gourmet ingredients, and you have a company dish. Best of all, each version takes just a few minutes and all are a one pan meal!
Cheesy Tuna Noodle Casserole with Green Olives
For years, my daughter’s been describing this casserole to me, a family favorite of her in-laws. For years, in my head, I’ve been thinking: Do we NEED another Tuna Casserole? The “We” is not just our family, but the whole collective of people in general, the world as a whole! One taste of this Cheesy Tuna Noodle Casserole with Green Olives was all it took to change my mind.
