Here it is August and I just realized I haven’t made/posted any knock your socks off tacos since my Bahn Mi Street Tacos around Memorial Day. Well, it’s time! Time for Baja Chicken Tacos & Baja Sauce.
Southwestern Stuffed Peppers
Sometimes I think a bell pepper can be stuffed with just about anything but I gotta tell you these easy Southwestern Stuffed Peppers are really a standout. They have the fun flavor of tacos but are fresher, lighter, and lower carb, and can I just say, stuffed with mostly pantry ingredients? And cheese. And ground beef, chicken or turkey (or just go vegetarian.) And then, well, more cheese.
Southwestern Queso Burgers
Sometimes you just need an epic burger and for me, that sometimes is a summer gathering or maybe a summer holiday. That’s when you need a knock your socks off show stopper of a burger. And if it’s messy, who cares when it’s these Southwestern Queso Burgers!
Bahn Mi Street Tacos
I don’t know if any of you guys watch Diners Drive-Ins & Dives but I swear it’s becoming an issue at my house. I might need a support group! That’s where I got the idea of Bahn Mi Street Tacos. They’re def a play on American Southern and Mexican with just a touch of Asian tossed in the mix. And just when you might think you’re bored of street tacos…this one is surprising in over the top flavor. A little crazy, even, but it just works!
Easy Southwestern Pork Stew
Easy Southwestern Pork Stew was a fave when my kids were young! I remember making this over and over, and as I made it today, I remembered why. It’s delish, but it’s also fast (under 30 minutes) and easy & it’s so versatile.
