A few weeks ago, Anna commented on my recipe for Horchata and asked where the recipe for my Horchata Arroz con Leche (Rice Pudding) that I promised to post was. (Anna, I hope you’re following so you see this, and sorry for the delay!) Horchata, if you’re not familiar, is a Mexican Aguas Fresca, a cool, creamy, cinnamony rice-based beverage. It’s so much better than it sounds; it’s absolutely delish, refreshing but with a little substance.

I’ve made a few versions of smashed chickpea avocado sandwiches. It’s been a try this with the recipe, try that with the recipe, using whatever’s at hand. I haven’t come up with an actual “recipe” that I wanted to share, though, until I hit upon a combination of Southwestern flavors. So here’s my Southwestern Smashed Chickpea Avocado Sandwich.
Ok, so what kind of blogger/friend would I be if I posted my homemade Mexican Pinto Bean Spice and then didn’t follow up with a recipe for my Spicy Pinto Beans Instant Pot or Stovetop? So here it is, and you can make these the old-fashioned way by simmering on the stove or the quicker newfangled Instant Pot version. I vote for quicker, but I have an Instant Pot and an issue with delaying gratification.
