I’m guessing the majority of people I know haven’t ever had the pleasure of being introduced to Beef Rendang – Indonesian Curry, I’m not even sure how it is that I started making Rendang. It seems kind of unlikely that back in the day, basically pre Internet & pre Food Network, this small Midwestern family would fall head over heels with this spicy curry beef dish that’s the national dish (and national treasure) of many countries, not just Indonesia.
Mexican Shredded Chicken Stuffed Peppers
I’m food crushing on my Mexican Shredded Chicken Stuffed Peppers! I’ve decided they’re like the perfect dish for this time of year when it’s not quite but almost fall weather and we’re alternating between hot, sunny days and cool crisp ones with a good amount of cold, drizzly wet and gloomy days sprinkled in here and there. Actually, I think there was one day where I started out with the heat on (mostly to dry the house out and take off that chill) and ended up turning on the air! It’s been that crazy.
Beef Chow Fun – Gon Chow Ngau Ho
Every now and then I have to break out with an Asian dish. I don’t know what it is, but I’ll just be trying to do my thing, following my weekly menu plan and something will “spark me.” That’s how I think of it when I get one of these inspiration/craving kind of things! I see the bottle of soy sauce, maybe there was a commercial on tv or a pic in a magazine, or maybe I just drove by an Asian restaurant…honestly, it doesn’t take much to get me to want to make something, and that’s why I made Beef Chow Fun – Gon Chow Ngau Ho.
Simple Instant Pot Spaghetti
I don’t think anyone can deny that I can be a bit of a food snob now and then. That’s made me avoid making certain dishes in my Instant Pot. Namely, Instant Pot Spaghetti. I took the plunge after visiting my daughter. When I got home, I decided to put out a little series of super easy, family-friendly Instant Pot meals to help Jess feed her hungry hoard. I gotta say, I’m eating my words over this recipe! Or I would be if I weren’t stuffing my mouth with this Simple Instant Pot Spaghetti!
Frito Taco Salad
If there ever was a summery, fun, please everyone kind of salad, Frito Taco Salad has got to be it. This is a salad that’s great for the family on any hot night when you want to temp appetites but don’t want anything too heavy. And it’s a great option if you’re asked to bring something to a party or potluck.
