I’m a huge fan of Lo Mein so when a friend mentioned she saw a recipe for Instant Pot Lo Mein, I was wowed. Could I make a Fast Fresh Instant Pot Lo Mein? One that’s as good or even better than my skillet versions? Maybe even better than takeout? The answer’s “Yes!” As in yes, yes, yes, pluheese! If you love Lo Mein, this Instant Pot version will rock your world.
Does anybody remember way back when I posted a copycat recipe for Panera’s Steak & White Cheddar Panini? I mentioned I already had a “go-to” sandwich, but I followed my friend’s lead and ordered the steak one. My “go-to” was Panera’s Turkey Artichoke Panini. When I was out with my friend I didn’t realize it was no longer on the menu, which is a good thing because I swear I had to grieve alone when I found out.
You know what I like, and I hope you do, too, since I’m posting one? Frittatas. And I like them for so many reasons. They’re delicious and the frugal me loves that frittatas are a great way to use a bit of this and a bit of that. And the healthy me loves that anything can go in a frittata.
There’s nothing like a little Mexican food when you’re just absolutely over Christmas & Christmas leftovers & New Years and New Years leftovers. And then there were the leftovers from the leftovers. So change it up and make enchiladas!
So hey, here I am a Minnesota blogger and I have no Wild Rice Soup on my blog. Uff da. Well, I do have a Wild Rice and Smoked Turkey Chowder (amazingly good and healthy!) but it’s just not the same as a Classic Wild Rice Soup in the Instant Pot, now is it? (As a quick aside, I will be posting recipes that aren’t Instant Pot and aren’t soup, it’s just been a crazy Holiday week, so if you don’t have an “IP” please bear with me!)
Thanksgiving is just around the corner, so I decided to make a Shortcut Pho Ga, Vietnamese Chicken Soup. And now, I’m sure you’re wondering “What on this side of heaven does Pho Ga have to do with the Great American Turkey Day?” Ahem. Thanksgiving, that is.
I don’t know about you, but I love, love, love me some Chicken Tortilla Soup. Or some Turkey Tortilla Soup. Or probably ANY Tortilla Soup. Just put it in front of me and I’ll eat it – no questions asked.
When the idea of making a Ramen with my Homemade Turkey Stock and a little leftover Thanksgiving Turkey entered my mind, I just couldn’t let it go. I mean seriously I was just under the grip of this cray cray idea. So of course, I started with google and I found the idea of Turkey Ramen is not without precedence. Is there nothing “new” in the world of cooking?
I don’t know when the thought popped in my mind to remake my turkey leftovers into Pozole, but I’m glad it did. And not just any old Pozole but a Green (Verde) Pozole with Turkey. Pozole Verde de Pavo.
This Chipotle Chicken Chowder has become a favorite of mine, which is a bit of a shame since someone in my family (no names mentioned to protect the guilty) won’t touch soup. And they’re missing out (and making me miss out) on having Chipotle Chicken Chowder in a regular rotation!
I’ve been making Elegant Mushroom Lemon Basil Soup with Wild Rice for ages. Decades. Long before I even had kids. Way back when I was just figuring out how to really expand my cooking skills beyond what my Mom taught me, I picked up one of those little paperback cookbooks near the grocery store check out stand. Do they still have those little cookbooks – I’ve become blind to everything stuck near the checkout stand, placed there to tempt you!
I started making these little Filled Wonton Cups as I call them many years ago. I and still make them because they’re fast, easy, make a bunch and most of all, they are strangely addictive. I promise you if you put these out on game day or bring them to a potluck, you’ll come off as an absolute genius. Seriously. People just can’t stop eating them.
So, what are you going to do with all that glorious Stock/Broth you’ve made with your leftover turkey this year? I’m voting for Turkey Noodle Soup – a family favorite. Once you have broth, it couldn’t be much easier, but a good canned broth will work, too. Feel free to make this with Chicken, as well.
There’s not much better than an old school Chicken or Turkey Enchilada: the tortilla wrapped around a creamy filling, napped in an easy Ranchero Sauce. Finished with a sprinkle of cheese, these are truly delicious. The sauce, flavorful (but not hot) gives a sharp contrast to the enchilada, itself. It’s a beautiful thing.
This old-fashioned recipe, Turkey or Chicken Newburg is a family fave…simple, comforting, delish. Think of this when you have leftover chicken or turkey – it’s a part of my “Twelve Days of Turkey” posting. (That “12 Days” was my cutesy way of naming my collection of over 40 dishes that are easily made with either leftover turkey or chicken.)
