You know what I like, and I hope you do, too, since I’m posting one? Frittatas. And I like them for so many reasons. They’re delicious and the frugal me loves that frittatas are a great way to use a bit of this and a bit of that. And the healthy me loves that anything can go in a frittata.

I love this Tortilla Soup that can be made with Chicken or turkey! How about a great after Thanksgiving meal!

Green Turkey Pozole (Pozole Verde de Pavo)

Green Pozole made with Turkey: I used leftover Thanksgiving Turkey & Broth but Chicken any good chicken stock will work, too!

I don’t know when the thought popped in my mind to remake my turkey leftovers into Pozole, but I’m glad it did. And not just any old Pozole but a Green (Verde) Pozole with Turkey. Pozole Verde de Pavo.

There is just something about this soup that is almost haunting. It is reminiscent of a Greek soup, yet the wild rice is clearly not a flavor normally found in the classic Greek soups. Just a lovely conglomeration of different flavors from around the globe (like so many of us are…) Easy, too.

Turkey (or Chicken) Noodle Soup

This soup is excellent made with chicken or turkey & any noodle is good but try the home-made egg noodle!!

So, what are you going to do with all that glorious Stock/Broth you’ve made with your leftover turkey this year?  I’m voting for Turkey Noodle Soup – a family favorite. Once you have broth, it couldn’t be much easier, but a good canned broth will work, too. Feel free to make this with Chicken, as well.
