Once summer comes I don’t think of food in the same way, and this year is no exception. Maybe this year, 2020 is the year more of us will be thinking about food a lot differently. I’m finding myself relaxing the rules, moving more and more away from the idea of “square meals” and trying to have more fun. If you’re a follower, you gotta know I love my Instant Pot! But I love it for the things it does well and for me it’s just a tool (nope, it hasn’t replaced either Chance or Homer’s spot on my bed) but I’m not one to compromise on any recipe just to use it. While I will probably still roast chicken every now and then in the oven, I’m really impressed with this Instant Pot Roasted Chicken!

It takes a meal like this Instant Pot Scratch Beef Noodle Soup with its rich luscious broth, tender flavorful beef and noodles (your choice, homemade or not) from an all-afternoon project to absolutely do-able! And it’s so easy, anyone can do it. Even if you’ve never thought about making a soup from scratch, bones and all before, I’ll talk ya through it.

I have kind of a thing for Ropa Vieja and if you’re here, maybe you do, too. I already have a recipe on my site for a long-simmered, Slow Cooker Classic Cuban Ropa Vieja, long a family fave, but these days, I’m all about the Instant Pot…and so I wondered if an Instant Pot Ropa Vieja would be just as good. Verdict: Yup, yup, yup! It’s fabulous.

I’m a huge fan of rice pilaf, especially ones with wild rice in them. Now, I might be able to claim that’s coz I’m from Minnesota, you betcha, which for decades was the bastion of wild rice. Truth be told, it’s because I’m a child of the 1960s and wild rice pilaf was served at so many restaurants, especially with kebabs which became wildly popular around that time period. Now I make Instant Pot Wild Rice Pilaf and it’s a game-changer.
