I think this is my new favorite fruit salad, Honey Ginger Lime Fruit Salad. It’s light, refreshing and has just enough sumpin’ sumpin’ to complement the fruit and enhance the flavor. It really does bring out the best in just about any fruit used.
I’ve been making this Chicken & Fruit Salad for years, originally culled from Cooking Light. It’s just such a gorgeous salad, full of all kinds of great things and it’s all set off by a creamy raspberry dressing. It’s one of my favorite ways to make sure I get some fruit in my diet along with a few greens. On a hot summer day, there’s nothing better.
This is one of my go to recipes during the summer. Whenever I need something to fill out a lunch or dinner or am asked to bring something to a potluck, picnic or barbecue, there’s a good chance I might be whipping up this salad. It’s so easy, I call it Lemon Poppyseed – The Easiest Fruit Salad You’ll Never Need a Recipe For. The ingredients are so few you seriously won’t need a recipe!
It’s been such an obscenely hot summer I’ve been looking for lots of ways to cool off. I posted Strawberry Sorbet and my Lemon (or Lemon Thyme) Buttermilk Popsicles, and I’m at it again – Cracked Black Pepper Honeydew Sorbet. Yeah, this is another of weird flavor combination but it really works – the flecks of pepper dance off your tongue and give interest to the sweet, fruity honeydew flavor.
