Asian Inspired Individual Meatloaves are a long-time family fave. I used to make them when my kids were small. They loved the individual servings (which also makes them cook up super fast.)
Puerco Con Chile Verde – Pork Green Chili Stew with Tomatillos
I’m a bit at a loss as to how to describe Puerco Con Chile Verde! Tender chunks of braised pork in a slightly spicy, slightly smoky green tomatillo sauce is descriptive but doesn’t quite give justice. Guisado de Puerco con Tomatillos or Carne de Puerco en Salsa Verde rolls off the tongue with a bit more flair.

I seem to be getting nostalgic in my “dotage” and have been leafing through my recipe box; hello, old familiar friends! I had to dust off this Cook’s Illustrated Meatloaf, long a family favorite – and the best part of all is the sauce. Oh, that sauce! Double it, triple it, bathe in it, I don’t care, just make the sauce.
Chicken & Rice Soup
We had quite an Easter this year, but I kept it simple. The main course was my Sunday Roast Chicken, the lemony variation. It was a subtle prelude to the Lemon Meringue Pie for dessert, but best of all, that Roast Chicken provided the base for a pot of Chicken & Rice Soup today. And that soup almost makes this dull, grey, Spring day feel sunny!

Marion Cunningham’s Overnight Waffles (Belgian)
Remember International Waffle day a few days ago? If you haven’t seen the post on Marion Cunningham’s Waffles, take a peek. Wonderful waffles, I’m sure, in a standard Waffle iron, but not so good as Belgian Waffles. I simply had to revisit that recipe and make them one more time with my suggested modifications – and here they are, in all their glory, adapted.
