Some of you might know, while others of you might not have a clue until you’re ready to bake your Pumpkin Pie (probably the evening before Thanksgiving) that Libby’s changed their pumpkin pie recipe (yes, the one from the back of the can) this fall (2019.) It’s the first time there has been a change since this pie, Libby’s Famous Pumpkin Pie, was put on the can in 1950.
This year I was gifted some sweet corn, freshly picked the night before. First of all, there’s something magical about fresh sweet corn, but to think of it being picked, on a balmy summer night by the light of the moon. All of a sudden it seemed even more magical! Some of my Sweet Corn went to my Instant Pot Sweet Corn (love love love no pots of boiling water and the IP cooks corn so beautifully) and the rest, well it went into this Potato Corn Chowder Instant Pot or Not.
I’m going to call this recipe for Sheetpan Strawberry Shortcake the last “hurrah” of summer. And you’ll notice I didn’t just stop at Strawberries for this shortcake and tossed on a few blueberries and raspberries, too. Really you can use any berries or for that matter, whatever fruit you think might be good on it!
Awhile back, I made a No Churn Strawberry Ice Cream and we loved it. It was super creamy deliciousness! This week, I decided I just had to have some No Churn Cherry Ice Cream! It’s kind of strange, but I like strawberries more than cherries, but I like this Cherry Ice Cream more than the Strawberry one. Go figure! I seriously went gaga over this!
Ok – we’ve had a couple of cooler days here in Minnesota, and I recently made a lot of my Grilled Blackened Cajun Chicken Breasts so I could use them to spin off several easy peasy meals that would be perfect for hot summer days. And I made a few but then I deviated! I couldn’t resist making these gorgeous Creamy Cajun Stuffed Shells with that final bit of chicken. I’m so excited about them I couldn’t hold off for a more appropriate season – these are probably going down as one of my most fave recipes ever on my site!
